Gaylon Janene McCoy, devoted lover of the Lord and lovingly known by her adored grandchildren as “Gigi”, passed away peacefully on November 23, 2025, in Houston, Texas, after a long and courageously fought illness.
Gaylon was born on May 9, 1961, in Kingsville, Texas, to Margaret Ann (Spears) and Kenneth Preston Estes. Gaylon was a 1979 graduate of Bay City High School, continuing her higher education business courses through WCJC.
Gaylon was a woman of vibrant eclectic spirit, having a personality that would light up any room and a laugh that invited everyone to join in. While she spent her professional years navigating the meticulous world of tax preparation for various CPAs, her soul was that of an artist. She found deep peace in the brushstrokes of Monet and the smooth
rhythms of jazz music. Gaylon’s artistic soul regularly inspired her frequent singing and dancing alone, with friends and most especially with family, always accompanied by her contagious laugh!
Gaylon’s creativity was perhaps best expressed in the kitchen. She was a passionate cook, and her family will forever remember her legendary holiday tradition of making "trash". She would bake massive quantities of her signature spicy snack mix, filling the house with savory aromas and producing so much of it, that it had to be stored in large trash bags to keep up with the demand from family and friends.
Though she dreamed of traveling to see the world’s great sights, her greatest joy in life and favorite place to be, was always with her family. Her daughter and her grandchildren were the center of her universe, and she poured every ounce of her love into being the best Gigi she could be.
Gaylon’s culinary artistry inspired her to prepare large quantities of so many of her cherished recipes; meals she then shared with her neighbors, friends and community groups. In honor of Gaylon’s desire to feed the hungry, in lieu of flowers, you are invited to make a memorial donation to Bay Area Meals on Wheels, 14045 Space Center Blvd,
Houston, Texas, 77062 or to your local food bank. Gaylon also donated much of her healthful energy to those in need, most especially women.
